One Skillet Cajun Honey Garlic Sausage and Rice

Ingredients

  • 1 tablespoon olive oil
  • 14 oz (400g) smoked sausage, sliced into rounds
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons honey
  • Salt and pepper to taste
  • A handful of chopped fresh parsley for garnish (optional)

Method

  1. Heat the Oil: In a large skillet over medium heat, add the olive oil.
  2. Cook Sausage: Add the sliced sausage to the skillet and cook until browned, about 5 minutes. Remove the sausage from the skillet and set it aside.
  3. Sauté Vegetables: In the same skillet, add the chopped onion and bell pepper. Cook for about 3-4 minutes, until the onion is translucent. Stir in the minced garlic and cook for another minute.
  4. Add Rice: Stir in the rice, ensuring it’s well-coated with the oil and vegetables.
  5. Combine Ingredients: Return the sausage to the skillet. Add the chicken broth, Cajun seasoning, honey, salt, and pepper. Stir to combine.
  6. Cook the Rice: Bring the mixture to a simmer.
  7. Cover the skillet, reduce the heat to low, and let it cook for about 20 minutes, or until the rice is tender and has absorbed the liquid.
